How to Make Strawberry Cheesecake Bites

  • Ingredients

    Topping:

    • 50g white chocolate, melted
    • 2 Scotch Finger biscuits, crushed
  • Instructions

    1. Preheat the oven to 150°C and line 9 muffin moulds with muffin cups.
    2. In a bowl, combine cream cheese, Greek yoghurt, protein powder, egg, icing sugar, and lemon zest. Whisk until smooth.
    3. Gently fold in the diced strawberries.
    4. Pour the mixture evenly into the prepared muffin cups.
    5. Bake for 20 minutes, or until there is a slight wobble in the centre.
    6. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight to set.
    7. Remove the cheesecakes from the muffin cases, drizzle with melted white chocolate, and sprinkle with crushed biscuits. Serve and enjoy!
