How to Make Honey Crunchy Nut Slice

  • Ingredients

    • 2 cups rice bubbles
    • 3 tbsp Collagen in Natural
    • ½ cup cashews
    • ½ cup almonds
    • ½ cup macadamias
    • ½ cup shredded coconut
    • ¼ cup pepitas
    • ¼ tsp salt
    • 7 tbsp coconut oil, melted
    • 7 tbsp honey
    • ½ teaspoon vanilla extract
  • Instructions

    1. Preheat your oven to 180°C, and line a rectangular tray with baking paper.

    2. Add the rice bubbles, collagen, cashews, almonds, macadamias, coconut, pepitas and salt to a large bowl.

    3. Add the melted coconut oil, honey and vanilla, and stir well until everything is evenly coated.

    4. Transfer the mixture to the lined tray and press down firmly into an even layer (around 1.5-2cm thick).

    5. Bake for 15–20 minutes, or until lightly golden (watch carefully, if you have a fast oven, the honey can caramelise and burn quickly).

    6. Allow to cool, then place in the fridge for at least 1 hour. Break up with your hands and enjoy!
